Introduction to Beer & Cheese pairing

Delighted to announce that Riddle-Me-Rye will be participating in this beer & cheese matching evening in the Stewart Brewing Dockside Tap (Bernard Street, Leith) on Thursday 22nd February.

You will have the chance to taste 6 beers, 6 British cheeses along with freshly baked breads and oatcakes.

Jakub from Stewart Brewing, Fiona from Wedge cheesemonger and Ian from Riddle-me-Rye will guide you through each beer, cheese and fresh baked bread

Here at Riddle-Me-Rye we put a lot of thought into how to make the best sourdough bread that we possibly can. Great bread starts with great ingredients and so I am delighted to announce that we will be using the wonderful range of wheat flours from Mungoswells as the core ingredients in our sourdough bread!

Mungoswells is a farm, maltings and mill located in Drem in East Lothian, around 20 miles east of Edinburgh. The team at Mungoswells grow all of their own wheat on the farm and mill it onsite using a mill that once belonged to the Swiss army! Having a maltings onsite also allows them to produce a wide range of flours including a malted wheat flour, as well as malted barley for brewers and distillers. I had the pleasure of being shown around the facilities on a recent trip to the mill and it truly is a wonder of engineering to behold!

Unlike commercial wheat flours the bread flour from Mungoswells has small dark flecks of bran throughout. Since the bran contains much of the fibre and mineral content of the wheat grain, the flour from Mungoswells is more nutritious and flavoursome than bread flours you will find on the supermarket shelves.

In starting up Riddle-Me-Rye as a fledgling bakery business it has been central to my values and vision for the company to work with other local small businesses where possible. I believe in supporting the local economy, building strong relationships with suppliers and collaborating with and supporting other small businesses where I can. Sometimes it is not possible to source ingredients locally – unfortunately we are not blessed with a climate that supports the growing of walnuts and dates! However, where we can source great ingredients locally we will do so and since flour is core to bread making it is extremely fortunate to have such an excellent supplier as Mungoswells right here on our doorstep.

For some of our speciality flours (Khorosan, Spelt, Einkorn etc) we will still need to go a little bit further afield to source these, but I will endevour to work with the best organic suppliers I can and keep you posted on where we are sourcing these ingredients (primarily Shipton Mill at present).

For this week’s pre-order service I’ll be baking the following:

Barley grain & ale sourdough – fast becoming a customer favourite! (medium loaf £2.75)

Walnut sourdough – this loaf is packed with walnuts and uses toasted walnut flour in the sourdough culture. Due to the cost of the walnuts it is an expensive loaf to make but has an outstanding flavour and goes exceptionally well with blue & other cheeses (medium loaf £3.50)

Plain white sourdough – a classic. (Medium loaf £2.50, large loaf £3.50)

For those folk who saw the scone sneak preview I can assure you that the scones this week are the best yet!

Gruyere, roasted shallot & thyme scones (wonderfully moist) £1 each
Cherry & almond scones (just like biting into a Bakewell slice!) £1 each.

Pre-orders by Thursday evening (25th Jan) for collection/delivery on Saturday (27th Jan). Collection from Riddle-Me-Rye HQ (Piershill Terrace) will be available in two slots between 10.30am-11am AND 3pm-4pm. Deliveries by arrangement between 11am and 3pm. Deliveries in the Edinburgh area are subject to £6 minimum order. Please note that I can’t give a precise time for deliveries due to the variable nature of the route and the fact that it is just me(!) so I do encourage people to collect where possible if time is a factor. Once all orders are placed I will share my delivery route & approximate timings.

Delighted to announce that we have now launched a pre-order service in the Edinburgh area. Simply place an order by Thursday evening and receive freshly baked sourdough loaves  and other goodies to your door on Saturday morning. Collection service also available from Riddle-Me-Rye HQ.

Hello Edinburgh – we are now in business!

Welcome to the Riddle-Me-Rye website! Riddle-Me-Rye is a new artisan microbakery business based in Edinburgh, specialising in sourdough bread, heritage grains, sweet treats and dairy-free options.

We’ll be in production in January 2018 bringing a range of baked goodies to markets and events across Edinburgh and beyond. Keep an eye out on the website for news of where we are popping up next!

We will also be posting tasty recipe ideas, and informative articles about such random topics as how NOT to kill your sourdough starter and how to avoid a soggy bottom! Tongue firmly in cheek of course! 😉

Feedback is always welcome, especially on any of the Riddle-Me-Rye products, but don’t worry, I won’t pester you with surveys after every bite or click!
