1/ Einkorn sourdough – *Sold out* Einkorn is one of the earliest cultivated grains, with evidence of its cultivation going back as far as 8650BC! It is a low-yielding crop which can grow well even on thin poor soil. Einkorn contains lower levels of gluten than modern wheat and is rich in protein, essential fatty acids, phosphorus, potassium, vitamin B6 and beta-carotene.
This sourdough is made with a mixture of organic einkorn flour and organic wheat flour then rolled in einkorn flakes before a cold overnight proove. It has a nutty flavour with a very slight almost fragrant finish. (Medium loaf, £3.50)(Vegan, dairy free)

2/ Barley grain & ale sourdough – *Sold out* This customer favourite is made with dark ale, toasted barley, sunflower seeds and linseeds. It has a crunchy crust, wonderfully soft crumb, a nutty flavour from the toasted grains and a hint of ale. It works really well with cheese and chutney but is equally delicious on its own! It is packed with flax seeds and chia seeds which are high in Omega-3 polyunsaturated fatty acids. 2/ Light Rye sourdough – *Sold out* This loaf is made with 30% rye and 70% wheat which gives it a much lighter texture than the dense rye loaves made with 100% rye. It is an everyday loaf, great for sandwiches and toast, and has a very pronounced sourness which comes from the rye sourdough starter used to ferment the dough. 3/ Foreign Extra Rye – *Sold out* this sourdough is our take on a Danish rugbrød. We call it “Foreign Extra Rye” and the clue why is in the photograph below! Starting with 100% dark rye flour we add toasted sunflower seeds, malted rye chops and linseeds that have been soaked overnight in Guinness Foreign Extra Stout (the strong export version of this classic ale). Finally we add a touch of barley malt extract before bringing the whole thing together. The depth of flavour in this loaf is incredible! (Medium loaf £3.50) (Vegan, dairy free)

From the start of September the pre-order service will operate on Sunday mornings instead of Friday afternoon/evening. I am returning to work in the IT industry Monday – Friday so the pre-order service will be more of a weekend hobby business going forward, and will operate on a fortnightly basis. The background and reasons for this have been discussed in the Riddle-Me-Rye newsletter.
The next pre-order service will operate on Sunday 1st September, with the “menu” and order form going live around 6-7pm on Monday 26th August. The website will also be updated with details of how the new service will operate.

3/ Chocolate, Cherry, Almond & Toasted Coconut sourdough – this bread was the winner of the Fruit Category in the Tiptree World Bread Awards 2018!
A decadent breakfast bread made with tart Montmorency cherries, whole blanched almonds, toasted coconut and oodles of dark chocolate! It might be decadent but there are still plenty of vitamins, minerals and antioxidants packed in there.
It is an expensive bread to make so for that reason we produce it in a smaller size than our other breads. It is available in a single or a double. A double portion is approximately the same size as our medium loaves (Double shown below). A single is half that, but enough for breakfast for two people. (Single £3, Double £5.50)(Vegan, dairy-free)

2/ Five-grain Khorasan sourdough – *Sold out* This sourdough loaf was a Gold Medal winner and Reserve Champion at the 2018 Scottish Bread Championships!
Khorasan is an ancient grain with a rich, nutty, buttery flavour. It is more nutritious than modern wheat and is high in protein, fibre, B vitamins and minerals, in particular manganese. Some people with an intolerance to modern wheat varieties have found they can digest products made with Khorasan flour more easily. This loaf is supplemented by a five grain blend of malted wheat flakes, barley flakes, sunflower seeds, millet and oats. (Medium loaf, £3.50)(Vegan, dairy-free)

3/ Vollkornbrot – Made with 100% dark rye flour with an addition of cracked rye and sunflower seeds. A dense bread which is traditionally sliced thinly it is an ideal accompaniment to smoked fish, charcuterie, cheeses, pickles or simply spread with butter. 2/ Purple Sweet Potato, roasted red onion & black pepper sourdough – *Sold out* This visually stunning loaf recently won a silver award at the 2019 Scottish Bread Championships. It is made with slow roasted red onions and freshly ground black pepper which provide a depth of savoury flavours that compliment the fragrance of the purple sweet potatoes. This bread makes a tasty toasted cheese sandwich and a stunning avocado toast. The colour of the sweet potatoes comes from anthocyanins which are a type of flavanoid found in red, purple, blue and black foods such as blueberries, raspberries and cherries. 2/ Wheat, spelt & rye sourdough – A sourdough combining these three classic grains. White wheat flour is combined with wholemeal spelt & wholemeal rye to provide all the goodness of whole grains. Extremely versatile, this works well for all occasions and is a great every day sourdough.

3/ New York Deli Rye – Sourdough loaf made from a mixture of wheat and rye flour, flavoured with caraway seeds. New York Deli Rye has its origins in Jewish bakeries in the Lower-East side of New York. Have it with your choice of sesame or poppy seed dressing. (Medium loaf £3.50) (Vegan, dairy free).

4/ Vollkornbrot – Made with 100% dark rye flour with an addition of cracked rye and sunflower seeds. A dense bread which is traditionally sliced thinly it is an ideal accompaniment to smoked fish, charcuterie, cheeses, pickles or simply spread with butter. It keeps exceptionally well and since it is not a crusty bread can even be kept in the fridge if desired. (520g loaf, £3.50)(Vegan, dairy free)

5/ Foreign Extra Rye – this sourdough is our take on a Danish rugbrød. We call it “Foreign Extra Rye” and the clue why is in the photograph below! Starting with Shipton Mill 100% dark rye flour we add toasted sunflower seeds, malted rye chops and linseeds that have been soaked overnight in Guinness Foreign Extra Stout (the strong export version of this classic ale). Finally we add a touch of barley malt extract before bringing the whole thing together. The depth of flavour in this loaf is incredible! (Medium loaf £3.50) (Vegan, dairy free)
Foreign Extra Rye
6/ Tourte au Seigle – A traditional French sourdough loaf containing 73% dark rye flour, it has a beautifully complex flavour which continues to develop as the loaf ages. It has a very thick crust with a moist crumb and keeps exceptionally well. Traditionally served sliced thinly, it works very well with smoked salmon, cheese, and charcuterie. 1/ Barley grain & ale sourdough – This customer favourite is made with dark ale, toasted barley, sunflower seeds and linseeds. It has a crunchy crust, wonderfully soft crumb, a nutty flavour from the toasted grains and a hint of ale. It works really well with cheese and chutney but is equally delicious on its own! 3/ Seeded white sourdough – A new loaf made with organic white flour, and a mixture of poppy seeds, flax seeds, sunflower seeds and pumpkin seeds. Seeds are often overlooked but it is recommended that we eat seeds every day as part of a healthy diet due to their status as nutritional powerhouses. They contain a wealth of vitamins and minerals, with the four varieties contained in this loaf together providing healthy fats (Omega-3), fibre, magnesium, manganese, phosphorus, iron, zinc, copper, calcium, vitamin K plus a wide range of B vitamins (Medium loaf, £3.50)(Vegan, dairy-free)
Seeded white sourdough
4/ Roasted sweet potato, rosemary & parmesan sourdough – This loaf contains chunks of roasted sweet potato as well as sweet potato mash in the dough itself. It is a beautifully balanced loaf with a real depth of flavour, buttery, aromatic and with a slight sweetness from the roasted sweet potato. After shaping it is dressed with sesame seeds which add a final nutty note to the overall flavour. (medium loaf £3.50)
5/ Focaccia – Light bubbly traditional Italian bread made with biga (a portion of pre-fermented flour), focaccia is perfect for tearing, sharing and snacking. This week we will have the following varieties:
6/ Northern Irish “Wheaten” soda bread – *Sold out* this bread is a really traditional daily bread in Northern Ireland, and one that you will find in any cafe, restaurant or public house. Soda bread has many regional variations throughout both Ireland and Scotland but the one thing they all have in common is that the raising agent is baking soda (as opposed to yeast or sourdough) and are nearly always made with buttermilk rather than water. This wholewheat variety works well served with butter, and with a chunk of vintage cheddar cheese or indeed any variety of jam. It is often served simply buttered alongside soup or as the basis for open sandwiches with various toppings.
It has a soft, tender crumb and a delicious aroma & buttery flavour. Please note that it does not have the same keeping qualities as sourdough and is good served fresh for 1-2 days or toasted on day 3. However, it rarely lasts that long! (1lb Tin loaf £3.00)
Both of these vinegars are fermented in small batches on Orkney and are probiotic live products.

1/ Pain de Campagne (French Country Sourdough) – Hearty country bread with a chewy flavoursome crust. Made with a rye sourdough starter which gives it a lovely acetic tang. This is one of THE classic sourdough loaves! A great all rounder – perfect for sandwiches, toast or with cheese! (Large loaf, £3.50)(Vegan, dairy free)
Pain de Campagne
2/ Chia & Flaxseed Omega-3 farmhouse sourdough – this sourdough loaf is packed with flax seeds and chia seeds which are high in Omega-3 polyunsaturated fatty acids. We don’t consume enough Omega-3 in our Western diet and consume far too much Omega-6 with this imbalance having a profound effect on human health. For more information on why it is important to consume more Omega-3 and less Omega-6 see the following article on the Riddle-Me-Rye website. The flour used in this loaf is around two thirds white and the remaining third a mixture of brown & wholemeal (Medium loaf, £3.50)(Vegan, dairy free)
Chia &Flaxseed sourdough
3/ Light Rye sourdough – This loaf is made with 30% rye and 70% wheat which gives it a much lighter texture than the dense rye loaves made with 100% rye. It is an everyday loaf, great for sandwiches and toast, and has a very pronounced sourness which comes from the rye. (Medium loaf £3.50) (Vegan, dairy free)
Light Rye sourdough
4/ Walnut sourdough – *Sold out* packed with walnuts and uses toasted walnut flour in the sourdough culture. It has a mauve coloured crumb due to the walnut flour and a deep buttery walnut flavour which works exceptionally well with blue cheeses. Walnuts are rich in Omega-3, antioxidants, iron, selenium, calcium, magnesium, zinc, vitamin E, and vitamin B6 (Medium loaf £4.00) (Vegan, dairy free)

It makes a great talking point comparing which places do the best “fifteens”. Cherries and marshmallows in a biscuit base, covered in coconut – deceptively simple and surprisingly delicious.
