Traditional Italian Focaccia with Biga

Light bubbly bread made with Italian flour, focaccia is perfect for tearing, sharing and snacking. While it is possible to make sourdough focaccia we have kept things traditional here at Riddle-Me-Rye using a portion of pre-fermented flour called a “biga”. This adds a depth of flavour to the focaccia.
