This week is a celebration of heritage grains and ancient grains, which are so important for biodiversity and packed with more vitamins and minerals than conventional modern wheat. Typically these grains are also more flavoursome and have different forms of gluten that are easier to digest than modern varieties of wheat. We have two brand new sourdough loaves and two new types of scones incorporating these wonderful grains!

** Please note that this is the final Saturday morning pre-order service – from the start of April the pre-order service will operate on Friday afternoon / early evening instead. Please see this week’s newsletter for more information on these changes to the service. Full details on how the Friday service will operate will also be available on the website from Monday 1st April, with the first Friday service operating on 5th April **

1/ Pain de Campagne au Rouge d’Ecosse  – This is a variation on our Pain de Campagne for which we won a Silver Medal at the 2018 Scottish Bread Championships! It is a Scottish twist on a French classic using the wonderful Scottish Rouge d’Ecosse heritage wholemeal flour which has been recently rescued from a seed bank and brought back into cultivation – there is more information about this grain on our page on heritage grains. (Large loaf £3.50)(Vegan, dairy-free)

2/ Five-grain Khorasan sourdough – This sourdough loaf was a Gold Medal winner and Reserve Champion at the 2018 Scottish Bread Championships!

Khorasan is an ancient grain with a rich, nutty, buttery flavour. It is more nutritious than modern wheat and is high in protein, fibre, B vitamins and minerals, in particular manganese. Some people with an intolerance to modern wheat varieties have found they can digest products made with Khorasan flour more easily. This loaf is supplemented by a five grain blend of malted wheat flakes, barley flakes, sunflower seeds, millet and oats. (Medium loaf, £3.50)(Vegan, dairy-free)

3/ Three-seed Emmer sourdough – Another ancient grain, Emmer is thought to be an ancestor of modern wheat and is closely related to durum wheat. It is suitable for bread baking and has been used for that purpose for many centuries including even in ancient Egypt.  In this loaf we combine emmer with a mixture of sesame seeds, sunflower seeds and pumpkin seeds for a nutty, full-flavoured loaf. (Medium loaf, £3.50)(Vegan, dairy-free)

4/ Sprouted Spelt flour sourdough with soy-soaked toasted sesame seeds – What a mouthful! This is a new sourdough in our sprouted grains range. This time we have sprouted some whole spelt grains, dried them out, ground them into flour and used this to make a highly nutritious bread. To compliment the nutty, grassy flavour of the sprouted spelt we have toasted some sesame seeds, soaked them overnight in soy sauce and combined these into the dough creating a wonderful depth of umami flavour. (Medium loaf, £4.00)(Vegan, dairy-free)

5/ Focaccia – Light bubbly traditional Italian bread made with biga (a portion of pre-fermented flour), focaccia is perfect for tearing, sharing and snacking. This week we will have the following varieties:

  • Cherry tomato (Vegan, dairy-free, £3.00/slice)
  • Courgette & Parmesan (£3.00/slice)
  • Rosemary & rock salt (Vegan, dairy free, £2.50/slice)
  • Olive & Rosemary (Vegan, dairy free, £3.00/slice)

Orkney Craft Vinegar

Both of these vinegars are fermented in small batches on Orkney and are probiotic live products.

The Bere Malt vinegar is made using Bere barley which is an ancient form of barley in use on Orkney for millennia. It is aged in oak barrels and has a deep malty, treacle-like flavour.  (250ml bottle, £8.50)

The Honey and Meadowsweet vinegar is made with pure honey & Orcadian spring water, infused with Meadowsweet. It is aged in chestnut barrels and has a light, delicate, floral/herbal flavour. (250ml bottle, £8.50)

How to order:

Complete the order form below by 7pm Thursday (28th March) for collection/delivery on Saturday (30th March). Collection from Riddle-Me-Rye HQ (Piershill Terrace, EH8 7EY) will be available between 10.00am & 12noon.  Deliveries in Edinburgh by arrangement between 12noon and 3pm. Deliveries are £2, with a £10 minimum order, and available only to postcodes in EH1, EH2, EH3, EH4, EH5, EH6, EH7, EH8 & EH9.

Please note that I can’t give a precise time for deliveries due to the variable nature of the route so I do encourage people to collect where possible if time is a factor. Once all orders are placed I will share my delivery route & approximate timings.
